I pulled together a Citrus Avocado salad this week that makes a great base for grilled or sautéed salmon and other protein sources. I created a lime-based dressing for this vegetable and fruit medley. It similar to my lemon vinaigrette, except the lemon juice is swapped out in favor of lime juice. It’s filled with red peppers, mandarin oranges, cucumber, red onion, and two types of greens.
My quick and easy Niçoise salad is free this week. It’s so easy to pull together and makes for a great picnic salad, or an on-the-go meal. In contrast, my Nicoise salad with herb vinaigrette takes time to prep but it’s totally worth it. It makes a great summer meal that can be prepared ahead of time and pulled out of the refrigerator when you’re ready to eat.
