The holidays always throw off my eating patterns. To help me stay somewhat healthy I keep food in my refrigerator and pantry that is packed with vitamins, minerals, protein, and fiber, and a few healthy treats so I don’t feel deprived.
For a hit of energy and protein, I’ve been making peanut butter cups. I also snack on nut butter fudge, along with some cut apples, cheddar cheese, and bubbly water.
We haven’t gotten to the gingerbread house yet, but I’ll post photos if we manage to get to it this coming week.
Finally, quesadillas are my latest fast “finger” food that I’ve been eating the past week or so. I have two ways to make them: frying pan or sheet pan. I squeeze a bit of lime juice over them and scoop up some pico de gallo and avocado to complete the meal.
