I’m eating lots of greens, herbs, and berries lately. The berries go with yogurt, whipped cream. I love whipped cream and only this brand.
For the herbs I use a few from my garden (mint and chives) and the rest from my local market (basil, cilantro). I add a bunch of greens together in a bowl and top with my favorite protein. Or if I have a bit more patience, I roll the greens and protein in a large romaine leaf and hold it in place with a toothpick, which has now become my quick and easy version of grain-free Spring Rolls.
This week I lived on spring rolls and eventually I got lazy and just chopped up all the greens, veggies, and protein and tossed it all in a bowl as salad. I drizzled my peanut sauce over the bowl and devoured it. And it stays well in the refrigerator until ready.
I confess that I have strange habit and I’m wondering if anyone else does this. I like my salads at room temperature so when I can’t wait for a refrigerated salad to warm up I place it in the microwave for about 15 seconds to take the chill off it.
