I spent the past few weeks eating kale mushroom stuffing on repeat because I love it and also because I’m trying to eat more kale. I’m one of those people who eats stuffing as a meal.
I tested it with roasted acorn squash, butternut squash, and delicata squash, and by far the winner for me is the roasted delicata squash stuffed with kale mushroom stuffing.
In holiday cookie news, I republished my original gingerbread cookie recipe. I didn’t realize it was in draft mode, so my apologies if you’ve been on the hunt for it. If you make either of these gingerbread cookies I’d love to know how it goes in the comments. I’ve had great luck with the dairy-free version however I think I may go back to the original recipe for my next baking project, which is a gingerbread house.
I’ve never made a gingerbread house with my recipe, so this is a first for me. I going to try to finish it in time to share it in a post before the holidays, but just in case, here’s my plan: My gingerbread house cookie cutters arrived a few days ago and we’re going to use either caramelized honey, caramel sauce, or coconut butter frosting or both to construct and decorate it. Add a comment if you’ve used my gingerbread cookie recipes to build a house. I’d love to know how it turned out and what you used to decorate it.
I’ve also been busy making peanut butter cups so I’ll try to post those before the holidays as well.
